Oven Baking

The brownie is next. Anything that can be done without the use of electrical mixer goes first. The result – pretty fudgy and not too sweet. Perfect with ice-cream and strawberries from the fresh food market, as an after-dinner dessert in the cold of the night at 12deg. Grrrr...

Sure, very easy one! Here it goes:

150g unsalted butter
1 cup baking cocoa
4 eggs
2 cups caster sugar
1 tsp vanilla essence
3/4 cup plain flour
1 tsp baking powder
(optional) choc bits / nuts

Preheat oven to 160 deg.

Line base of baking tin (27cm by 18cm by 3cm) with baking paper.

Melt butter and stir in cocoa, allow to cool slightly before beating in eggs and stiring in sugar and vanilla essence.

Sift flour and baking powder together. Add to butter mixture and stir thoroughly until mixed.

Mix in choc bits / nuts if desired.

Bake for abt 50min to 1hr, until just firm when pressed in the cenre. Leave to cool in tin for 20min before turning onto cooling rack.

Cut when cold.
